Dinners Under $10 – Asparagus Frittata

Asparagus Frittata
 
Ingredients
· ½ cup onion , chopped
· 1 clove garlic , crushed
· 3 Tbsp. margarine
· 10 eggs
· ½ cup low fat milk (1%)
· ½ tsp. basil
· ½ tsp. salt
· 1/8 tsp. ground pepper
· 1 can (15 oz.) DEL MONTE Asparagus Spears , drained
· ½ cup shredded Monterey Jack cheese ,
· 1 can (14.5 oz.) DELMONTE Stewed Tomatoes, Italian Recipe with Basil, Garlic and Oregano
· 1 Tbsp. cornstarch
Directions
1. Sauté onion and garlic in 1 Tbsp. margarine in 10-inch oven proof omelet pan; set aside.
2. Beat eggs with milk, basil, salt and pepper; stir in sautéed onions. Melt remaining 2 Tbsp. margarine in omelet pan; remove from heat.
3. Add asparagus; pour egg mixture over the asparagus and sprinkle with cheese.
4. Bake in preheated, 350°F oven, 30 – 35 minutes or until just set.
5. Combine tomatoes and cornstarch. Cook in small sauce pan stirring constantly, until thickened and translucent.
6. Cut frittata in 6 wedges. Serve each wedge with tomato sauce.
