Cinco de Mayo is coming up so I thought that it would be a good time to post a low-cost and easy Spanish Rice recipe!
Ingredients
Rice – 1 cup dry (about 3 cups cooked)
Salsa – 16 oz
Chicken Broth – 1 can
Shredded Cheese – as much as you want!

First cook the rice. Second add the salsa and the chicken broth. Last, top with shredded cheese!

if you add equal parts of rice, salsa, and chicken brother AFTER cooking the rice, wont that make a rice soup?
Use a chunky salsa. The equal parts is to the measured dry amount (1 cup of dry rice will yield about 3 cups of cooked rice). I wasn’t clear on that, but you do cook it first and add the chicken broth last. I haven’t made it in a while, but I don’t recall it being soupy 🙂
