What makes the Best Leftovers?

Here is a reader question from Shelly. She asks:

My boyfriend never eats leftovers no matter how much we have left. So my question is what meal makes the best leftovers?

That is a great question! What do you guys think? Which meals make the best leftovers.

Personally, I think that pasta is great as a leftover if you add a little water before you reheat it. But, pasta is also pretty easy to measure out and not get leftovers of! The only food that I cannot tell the difference between a leftover and the night it was made is homemade soup 🙂 That is one of my favorites. This week I am going to be making Potato and Double Corn Chowder and I’ll let you know how it goes!

What meals do you make that can be used as leftovers?

Curry makes a great leftover. I even like lasagna and meatloaf.

What about taking the leftover item and recreating it into something else? Kind of like Robin Miller on food network. Like leftover taco meat and beans (from tacos) becomes taco salad. Maybe if he thinks he is eating a “new” meal, he will be fine. Is it the fact that he doesn’t want to eat the same thing the next day, or is it that he doesn’t want to eat something prepared the day before?

Whole chickens, as you can turn them into lots of new meals!

Also Chili. Always tastes better the next day! I often make it a day before we’re going to eat it for that very reason

I agree pasta reheats very well, soups, I make a Taco Casserole lasagna type thing and my husband takes it to work and reheats every day! I think Cheeseburgers, Sandwiches, etc all get very soggy!

Lasagna! None of the men in my life like leftovers (if they know they’re leftovers), but all of them will eat reheated lasagna.

I’m getting pretty good at repurposing roast beef in to 2-3 meals (roast beef w/veggies, then shredded beef burritos, then beef stew). Next up: repurposing roasted chicken.

I make stir-fry a few times a week and it makes great left overs for the day after. You can also turn it into fried rice. Also, if you make roast one night, you can use the left-overs in a variety of ways- bbq sandwiches, chimichangas, beef stroganoff, and lots of recipes.

I use leftover roasted chicken for chicken enchiladas or chicken spaghetti. With leftover roast, I make philly cheese steak sandwiches or mix with barbeque sauce and make barbeque sandwiches.

I love stir fry 🙂 Those are all some great re-purposing ideas! I think I like that more than leftovers – it would definitely be better for somebody who doesn’t like leftovers.
