This is the final day in the Rachael Ray 4 Dinners under $10 Series! Today’s recipe is Sweet Potato and Ham Fritters.
Ingredients:
- 1 ¼ pounds sweet potatoes, peeled and grated
- ½ pound ham, chopped
- 5 scallions, finely chopped
- 2/3 cup chopped flat-leaf parsley, plus 1/3 cup leaves
- 1/3 cup flour
- Salt and pepper
- 2 large eggs
- 1 tablespoon Dijon mustard
- ½ cup plus 2 tablespoons vegetable oil
- 6 ribs celery, thinly sliced, plus ½ cup celery leaves
Directions:
- Preheat the oven to 200°. Place a rack on a baking sheet and transfer to the oven. In a large bowl, toss the sweet potatoes, ham, scallions, chopped parsley and flour; season with salt and pepper. In a separate bowl, beat the eggs with 1 teaspoon mustard. Stir the egg mixture into the sweet potato mixture.
- In a large, heavy skillet, heat 2 tablespoons oil over medium-high heat. Working tow at a time, and 1/3-cup mounds of sweet potato mixture, flattening into rounds. Lower the heat to medium and cook until golden, 3 minutes on each side; transfer to the baking sheet to keep warm. Add 2 tablespoon oil between batches.
- In a bowl, whisk the remaining 2 tablespoons oil and remaining 2 teaspoons mustard. Add the parley leaves, celery and celery leaves and toss to dress. Serve topped with the warm fritters.
